Vegan Black Bean & Zucchini Brownies Recipe

Combine Dry Ingredients:

  • 1 box @simplemills brownie mix

  • 3 Tbs extra almond flour

  • 2 Tbs cacao

  • 1 scoop collagen

  • Dash salt

Wet Ingredients:

  • 2 eggs

  • 2 tsp vanilla extract

  • 1 Tbs honey

  • 1/2 cup melted coconut oil

  • 1/2 cup ripened avocado

  • 1 can rinsed and drained black beans

  • 1 cup raw zucchini, grated and squeezed

  • Lily’s chocolate chips, your preference

Procedure:

  1. Preheat oven to 350 degrees

  2. Blend all wet ingredients until smooth and creamy.

  3. Pour mixture into dry ingredients

  4. Fold, mix, stir, don’t over stir, taste, check consistency. Batter will be thick just like normal brownie batter.

  5. Pour into silicone muffin liners or in 8x8 glass pan. (Spray liners or pan) Top with chocolate chips

  6. Bake for 15 min. Check. If not ready, keep adding 3-5 min.

  7. Allow to cool once baked and then best kept refrigerated!
